dubai chocolate snack bars
whoever invented the viral dubai chocolate bar surely deserves some sort of award. but, i also deserve some sort of award for this easy, at home ~dubai dupe~ … once i became aware of the big biscuit shredded wheats, i knew this is where they belonged.
prep time: 25 minutes
cook time: 10 minutes + chilling time
1 tablespoon butter (or coconut oil for vegan option)
6 BIG BISCUIT shredded wheats, crushed
1 cup pistachio butter
8-10 medjool dates, pitted
1 1/4 cup dark chocolate
1/4 cup pistachios, toasted & chopped
1/2 tsp flaky salt
Heat butter in a medium sauté pan over low heat. When it starts to brown, add the crushed shredded wheat; toast until they brown & go aromatic, about 6-8 minutes.
Add pistachio butter & stir; remove from the heat & reserve.
While the filling chills, prepare the date base: cut two pieces of wax or parchment paper to fit the size of whatever pan you are using to set the bars. Arrange dates on the paper in a similar shape as the pan. Press the second piece of paper on top of the arranged dates & roll with a pin to flatten. Transfer to the pan with the sticky inside of the dates facing up & peel away the top piece of paper.
Fill the pan with the pistachio shredded wheat filling & set aside.
Melt chocolate & pour on top of pistachio filling. Sprinkle with pistachios & salt. Refrigerate to set before slicing.
NOTES:
The rolling of the dates should press them together. If there are any holes, it’s okay, but you can also try to squish the dates by hand to fill them.
The bars keep/hold best in the refrigerator but can remain at room temperature if need be.
