extra dirty martini dip
this dip is my number one most viewed piece of social media ever so it is kind of like one of my babies. i guess you could call it my rebel child because one slip of saying “caramelized” instead of “sautéed” literally got me crucified by the onion police. still love her the most all the same.
prep time: 25 minutes
cook time: 10 minutes
1 tablespoon olive oil
1 cup sweet onion, chopped
½ cup gin or vodka – whatever alc you typically turn to for a martini
1½ cups sour cream
¼ cup mayonnaise
1 cup chopped martini olives, plus more for garnish
1 tablespon martini olive brine
½ cup gorgonzola, crumbled
+ lemon zest to finish
salt & freshly ground black pepper, to taste
Add olive oil to a small sauté over medium heat; add onions, salt & black pepper to taste. Sauté until the onions are browned but still have a bite. Add alcohol & cook out until almost dry. Set aside to cool.
In a medium bowl combine sour cream, mayonnaise, olives, olive brine, black pepper, gorgonzola & reserved sautéed onions.
Spoon the dip into a shallow dish; garnish with lemon zest & olives. Serve with crudités & your favorite cracker or chip!
NOTES
The onions should have a sticky vibe one they’re cooled down & ready to add.
Kettle chips are the superior pairing. If using crudités, try chip-like veggies: thinly sliced radish, endive or bias cut cucumber.
